Abby's Thursday night dinner club menus

Every Thursday I host a dinner party at my house for anywhere from 4-30 people.  Here are my complete menus with recipes.  Almost everything is easy and fast to make.   - Abby

 

Winter

 

Vaguely Southern

-Best of Boston's Kick Ass Chili

-Northern Cornbread with real stone ground cornmeal from a mill built in the 1800.

-Asparagus sauteed with olive oil and tossed with sun dried tomatoes

-Lemon Chiffon Tart with a Hazelnut Crust and a Raspberry Coulis - A little labor intensive, so plan ahead, but it is well worth the effort.  Light and tangy. 

 

Spanish

-Dates wrapped in bacon and stuffed with Bulgarian Kashkaval

-Caldo Gallego

-Tortilla Espanola

-Flan

 

Hearty old world food

- Beef Brisket in red wine with caramelized onions

- Potatoes roasted with garlic in olive oil

- Linzertorte - An Austrian almond raspberry torte. Elegant and easy.

 

New Orleans

- Megan's fabulous New Orleans Red Beans and Rice - from my good friend Megan Bronson.  Makes enough for a small army.

- Jambalaya with shrimp and chicken

- Creole okra

- Pecan toffee squares -Rich and buttery, just like the Big Easy

 

 

Italian

- Minestrone with Italian sausage and tortellini

- War Bread

- Green salad of some sort

- My world famous Tiramisu -Crazy labor intensive.  I suppose you could just buy a lot of the ingredients, but that takes all the fun out of it.

 

 

Spring

 

Spanish

- Paella with shrimp, chorizo and chicken

- Tortilla Espanola

- Tarta de Santiago - Traditional almond tarte of the Santiago Pilgrimage route

 

Italian

-Saffron Rissoto with and artichoke hearts and spinach

-Asparagus with olive oil and pine nuts (vegan)

-Chocolate Mousse Cake - Cut your slices small 'cause this is one super rich cake!

 

Uncatagorical

-Quiche

-Georgian Eggplant salad with walnuts(vegan)

-Coconut nut bars - Lemon and coconut, how can you go wrong?

 

Mexican

-Caldo Tlalpeño

- Fiesta Rice and Black Bean Salad

-Pecan Puffs -Like Mexican wedding cookies only a lot tastier.

 

Thai

- Peanut noodles

- Fresh spring rolls with a ginger hoisen dipping sauce

- Chocolate Mousse -Sinfully rich and smooth

 

 

Summer

 

Greek

-Spanikopita (spinach and feta wrapped in phylo dough)

- Orzo Salad

-Greek meatballs undoubtedly with some sort of sauce

-Greek honey cookies - Drippy, gooey and delicious!

 

Farmers Market fresh

-Chicken roulade with Spinach and asadero cheese

- Moroccan Carrot Salad

-Ginger Peach tart - Easy and stunning!

 

Generally Lebanese with a twist

-Tabbouleh - Great way to use up the garden's bounty

-Grilled chicken Kabobs -

-Babaganouj - I like this witha lot of garlic

-Frangipane Poached Pear Tart - This one takes a while but boy is it something marvelous

 

 

-Sherry chicken breasts with rosemary and artichoke hearts - Lordy this is good.  The gravy is lovely over potatoes

-Spinach and arugula salad topped with Tart local apples, feta, and toasted walnuts- The name says it all

-New potatoes tossed with dill -

-Napoleon (thousand layer pastry) with a raspberry cream - suprisingly easy to make, but messy to cut

 

 

 

Fall

 

Greek

- Rotinni salad with kalamata, feta, basil, and white wine infused onions

- Red leaf lettuce salad with toasted pecans, red grapes and feta

-Lemon Chiffon Tart with a Hazelnut Crust and a Raspberry Coulis - A little labor intensive, so plan ahead, but it is well worth the effort.  Light and tangy.

 

 

Hearty for the cold

-Mom's beef stew

-Joe's Coleslaw (vegan)

-Pecan shortbread topped with lime curd and drizzled with dark chocolate - a Perfect blend of sweet and tangy, dry and gooey 

 

Roughly Mediteranian

-Orzo Salad with spinach, feta and roasted red peppers

-Leek and Swiss Chard tart with hickory smoked bacon and gruyere cheese

-New York Cheesecake with a raspberry coulis- A tasty fool proof cheese cake that can be dressed up with all sorts of things. 

 

Italian

- Crepes cannelloni filled with spinach and chicken topped with a bechemel sauce and parmigiana

- Garbanzo bean and baby spinach salad with a sun-dried tomato vinaigrette.

- Lemon squares - An old favorite

 

 

Persian

-Chicken Koresh with saffron infused orange slices and pomegranate seeds

Chickpea Koresh

- Jasmine Rice

- Fresh spinach salad with a yogurt cumin dressing - Light and tangy

 

- Baklava - Don't be scared, its not that hard at all

 

New Orleans

- Megan's fabulous New Orleans Red Beans and Rice - from my good friend Megan Bronson.  Makes enough for a small army.

 

- Creole oven roasted sweet potatos

- Sinfully rich Doberge cake (that's a cake with eight, count them EIGHT!, layers of cake with chocolate filling and frosting)

 

-Blitz torte
