Invented Apple-ish Pie (with minimal sugar)

Lemon Chiffon Tart with a Hazelnut Crust and a Raspberry Coulis - a little labor intensive but this one will knock your socks off!

Lemon Pie Except for the pie crust, you probably have all the ingredients on hand.  Quite yummy. 

Linzertorte - An Austrian Almond raspberry tart. Showy and easy.

Oaxaca Thanksgiving Pumpkin Pie - I think this is the same recipe as the one on the side of the Libby's Pumpkin can, but it sure was good
